Chef Jeff Cooke

Jeff Cooke is a local boy from Grand Island, NY. He started cooking professionally at age 16. He gained his kitchen experience in casinos and country clubs and lists the late Chef Bob Mallot of Sequoia and Fat Bob’s fame as his mentor.


Over the years, Cooke got quite a following of people who became fans of his food. One person was Nick Pitillo. Jeff was asked to start this adventure at Osteria 166 and “chose this gig because Nick Pitillo made me an offer ‘that cannot be refused.’ ”


I get really excited about preparing foods that are raised by people I know, that are close by the restaurant and are seasonal. I find the regional cuisine of the good ol’ U.S. of A to be my favorite—the Deep South and New Orleans especially. They are a real melting pot.


Those influences are apparent in the food at Osteria 166—a casual Italian restaurant. Cooke’s trademark specials are continually changing daily based on what is fresh and in-season. It keeps him inspired and the customers coming back for more.
